Saint-Emilion Grand Cru Classé

Situation: on the north-west outskirts of the village of Saint Emilion.

Surface area: 20 hectares (only 17.6 ha planted)

Soil: limestone (shallow soil on limestone rock), clay and limestone on the slope and clay-silt soil on the bottom of the slope

Grapes varieties: 87% Merlot; 13% Cabernet Franc

Average age of vines: 35 years old

Harvest and Vinification: 
Hand sorting, including on specially adapted vibrating tables. Fermentation in temperature-controlled concrete vats. Slow alcoholic fermentation with gentle extraction during 3-4 weeks to obtain smooth and silky tannins. The malo-lactic fermentation takes place in new oak barrels (40% in total).

Ageing: Barrel ageing lasts about 16 months : 40% in new oak barrels, 40% in one year barrels and 20% in vat.
